In small microwave-proof glass bowl, combine marinade ingredients; heat for 1 minute. Place Tofu cubes in medium bowl; pour marinade over Tofu. Let stand.
Place peppers, onion, zucchini, mushrooms and water in covered 2 quart microwave-proof bowl and heat for 2 minutes until slightly limp.
Separate onion into layers. Arrange drained tofu (save marinade) and vegetables in a colorful arrangement on skewers.
Hints: for added sturdiness begin and end with peppers; use a layer of onion between each addition for added flavor.
Brush kebabs with marinade. Kebabs can be prepared in advance to this point if desired. Broil or grill until lightly browned and heated through; approximately 8 minutes; turn once half way through cooking. Serve on a bed of steamed rice.

Marinated tofu is great on the grill, skewered with all your favorite vegetables. Try this variation of an old favorite the next time you're entertaining.
1/2 cup hickory flavored BBQ sauce
3 Tbsp fat-free Italian salad dressing
1 tsp Worcestershire sauce
1 1/2 tsp minced garlic
1/2 tsp onion powder
1 pkg (14 oz) House Premium or House Organic Tofu Firm drained and cut into 1" cubes
1 large red or green pepper, cut into 1" squares
1 large onion, peeled and quartered
1 medium zucchini, cut into 1/4" slices
8 medium brown mushrooms
1 Tbsp fresh lime juice
8 cherry tomatoes
3 cups cooked rice
