Braised Cubed Tofu with Eggplant & Zucchini

Directions

Drain water out of Tofu well. Dice eggplant and zucchini as well in the same size. Sprinkle flour all over the Tofu and deep fry in the preheated oil 350°F for about 3 mins. Deep fry eggplant and zucchini as well (no need to put flour) and keep them aside. Heat olive oil in a pan and sauté onion and garlic until they are transparent. Add white wine, bring it to boil and let the liquid reduce to almost dry. Add chicken stock and tomato puree and let it cook for 1 min. Add Tofu, zucchini and eggplant. Cook them thoroughly and season with salt and pepper.
