Chocolate/Vanilla Tofu Cream Pancakes

1.Sift flour and baking powder in medium bowl. Set aside.
2.Place Tofu in another medium bowl. Mix with whisk until Tofu gets creamy. Set aside.
3.Break chocolate into small pieces and place in a microwave-safe bowl. Add heavy cream. Cover lightly with plastic wrap. Heat on high in microwave for 30 seconds or until chocolate melts. Remove bowl and mix well.
4.Add Tofu into chocolate mixture and mix well. Set aside.
5.Mix eggs and sugar in a large bowl. Add vegetable oil, milk and sifted flour/baking powder. Mix well.
6.Lightly heat vegetable oil in a frying pan. Add about 3 Tbsp of the egg/flour mixture. Cook on low heat until both sides are lightly browned.
7.Stack the pancakes on a plate.Pour Chocolate/Vanilla Tofu Cream over pancakes.
Optional: Decorate with fresh fruit.

3 Tbsp sugar
1 cup flour
1 tsp baking powder
1 Tbsp vegetable oil
2/3 cup milk
2 tsp vegetable oil
Chocolate/Vanilla Tofu Cream
4 oz House Premium Tofu - Extra Soft
2.5 oz milk chocolate
2 Tbsp heavy cream
1 tsp vanilla extract
vegetable oil for frying pan
Optional: Fresh fruit for decoration
