Creamy Cilantro Lime Noodles

Directions

Prepare Tofu Shirataki according to package instructions.
Add all remaining ingredients to the bowl of a food processor or blender and blend until smooth and creamy. Toss noodles and sauce in a large pot and heat through.

If not using a high-speed food processor or blender, soak or boil cashews first so they will be soft enough for your blender. To soak: cover cashews with water and soak for 6 hours or overnight. Drain before using. To boil: add cashews to a small pot, cover with water and boil for 10-15 min or until softened. Drain before using.

1 cup raw cashews (soaked or boiled if not using a high-speed blender or food processor)
1/2 cup packed cilantro
3/4 cup water
2 cloves garlic
Zest from 1 lime (about 1 tsp)
Juice from 1 lime (about 2 Tbsp)
1/2 tsp salt
1/4 tsp pepper
