Curried Tofu Scramble

Directions

Drain tofu and set aside, wrapping with paper towel.

Soak dried shiitake mushrooms in water and put in microwave for 1 min. Take all excess water out and slice into thin strips.

In wok or large pan, heat sesame oil and cook the ground chicken, carrot and shiitake.

Add tofu and break with wooden spoon. Add water and Java curry and cook for 4-5 minutes.

Add egg and mix lightly. Sprinkle green perilla leaves. Serve warm.

7 oz ground chicken
1 carrot, julienned
4 pcs dried shiitake mushrooms
1 Tbsp sesame oil
1/3 cup water
1/2 pkg House Java Curry, Med Hot(4oz.)
1 egg, lightly beaten
10 green perilla leaves, sliced thin
