Golden Tofu Veggie Patties

Directions

1.Combine in a bowl, squash, sweet potato, carrot, bean sprouts, onion, flour, baking powder, salt and pepper.
2.Add eggs, mixing well.
3.Heat 1/4-inch of oil in large skillet. Drop vegetable mixture by heaping tablespoonfuls into oil, flattening with back of spoon to form 2 1/2 to 3-inch patties.
4.Top with Tofu. Cover with more vegetable patties.
5.Fry several at a time, without crowding pan, until golden brown on both side. Drain on paper towels.
6.Combine vinegar and garlic in a bowl.

Serve: Hot with vinegar for dipping.

1 tsp baking powder
1 tsp salt
1/4 tsp black pepper
2 eggs, beaten (use egg substitute for vegans)
vegetable oil for frying
1/2 cup seasoned rice vinegar
1 tsp crushed garlic
