Grilled Tofu & Cheese

Directions

Cut Tofu into 12 slices (3 for each sandwich).

For each sandwich, place one slice of bread, buttered side down, in a non-stick skillet over medium heat. Layer with a slice of cheese and one layer each of Tofu and tomato. Add another slice of cheese and top with bread slice, buttered side up.

Grill until bottom layer of cheese begins to melt, then flip sandwich carefully with a spatula and continue cooking until the turned layer of cheese melts. Repeat with remaining ingredients for additional sandwiches. Serve immediately.
