Italian Stuffed Tofu Manicotti

Directions

Preheat oven to 350F, Cook manicotti according to package instructions. Add remaining ingredients to a large bowl and mix well to combine.

Line a casserole or baking dish with half of the spaghetti sauce. Pipe the tofu filling into the manicotti. Once filled, pour remaining sauce on top of manicotti. Top with parmesan cheese (optional) and bake for 30 minutes.

1 box manicotti
1-1/2 cups chopped spinach
4-1/2 cups low sodium spaghetti sauce
2 Tbsp extra virgin olive oil
2 Tbsp garlic, minced
2 Tbsp parsley
2 Tbsp lemon juice
1/4 cup soy milk (optional)
Salt and Pepper to taste
