Savory Orange Tofu Mixed Rice

Directions

In a rice cooker, add rice and water. Cook rice.

Before rice is done (about 8 min. remaining), quickly open the rice cooker and add in tofu, remaining sauce, vegetables, ginger, soy sauce, and mirin and stir.

Once rice is done, add scallions and orange zest.

Season with salt and pepper and serve.

1½ cup rice of your choice
1 3/4 cup water
1 cup mixed vegetables
(fresh or thawed from frozen)
3 Tbsp reduced sodium soy sauce
3 Tbsp mirin
½ tsp ginger powder
1 scallion, sliced
1/4 tsp salt
1/4 tsp pepper
Orange zest for garnish
