Soft & Moist Chocolate Chip Cookies

Preheat oven to 375°F
Place tofu between several layers of paper towels. Press hard to squeeze out moisture. Set in a strainer over a bowl to drain further. Meanwhile, place flour, baking soda and salt in a medium bowl. Blend well with fork; set aside.
Press tofu one final time to blot moisture. Place in another mixing bowl. Using an electric mixer on low speed, mix tofu. Add brown sugar and butter; blend into tofu. Add eggs and vanilla; mix well.
Sprinkle flour mixture over tofu mixture. Mix with rubber spatula just until flour is well blended. Stir in chocolate morsels.
Spray cookie sheet with nonstick spray. Using a teaspoon drop cookie dough onto sheet leaving about 1 inch of space between each. Bake for 10 to 11 minutes or until golden brown. Cool on cookie sheet 2 minutes before removing to cooling rack.
MAKES FOUR DOZEN COOKIES
1 pkg (14 oz) House Premium or House Organic Tofu Soft, drained
2 cups all purpose flour
1 tsp baking soda
1 tsp salt
1 1/2 cups packed golden or light brown sugar
1 cup (8 oz) butter, softened
2 eggs, beaten
2 tsp vanilla
1 pkg (12 oz) milk chocolate chips
