Directions

Cook rice in rice cooker or on the stove per package instructions. Keep warm.
Heat 2 tablespoons oil in a skillet over medium heat and fry egg over easy; remove to a plate.
Heat remaining oil in a large skillet over medium-high heat. Add carrots, mushrooms, and kale to skillet and saute for 4 minutes. Add bean sprouts, scallions, tofu, soy sauce, garlic sauce, sugar, stock, sesame oil and lemon juice to the skillet; saute for 3 more minutes.
Place cooked rice in large bowl and arrange tofu and vegetables on top. Position egg across top and sprinkle with sesame seeds.
