Spring Rolls with Spicy Garlic Tofu Cutlet

Directions

Prepare Shirataki noodles according to package instructions, set aside.

Pour water into a shallow dish and set aside.

Prepare spring roll by dipping rice paper in the water for a few seconds and transfer to a damp cutting board, making sure it is not wrinkled or overlapping.

Add a small handful of Shirataki noodles and layer the carrots, cucumber, bell pepper, and a few pieces of tofu on top.  Gently fold over once, tuck in edges on both sides, and continue rolling until it is sealed.

Transfer to plate, seam side down, underneath a damp paper towel to keep fresh.  Repeat with remaining filling and rice paper.  Serve with your choice of dipping sauce.

Note:

Peanut or sweet and sour sauce goes great with these spring rolls!

1 pkg House Foods Traditional Shirataki noodles
1 pkg rice paper spring roll wrappers
½ cup cucumber, cut into matchsticks
1 red bell pepper, seeded and cut into matchsticks
½ cup carrots, cut into matchsticks
