Tofu, Tuna and Corn Gratin

Preheat oven to 375°F degrees
Lighly grease casserole

1.Béchamel Sauce:
Add butter and flour to a microwave-safe bowl. Cover with plastic wrap, making vents on both sides, and heat in microwave oven on high for 1 minute. Remove, add approximately 4 Tbsp milk and with a whisk mix well. Add remaining milk and mix. Season with salt and black pepper. Cover again with plastic wrap, making vents on both sides, heat in microwave oven on high for 4 minutes. Remove and mix well. Remove plastic wrap and heat again in microwave oven on high for 4 more minutes. Remove and mix until mixture becomes smooth.

2.Wrap Tofu in paper towels and press to remove all excess water from Tofu. Set aside.

3.Add Tofu, tuna and corn to Béchamel Sauce. Mix well. Transfer to greased casserole. Sprinkle with cheddar cheese.

4.Heat Tofu/tuna casserole in a pre-heated oven for 30~35 minutes until the casserole surface becomes golden brown. Remove casserole and sprinkle with chopped parsley. Serve hot.

Béchamel Sauce:
6 Tbsp flour
2 oz (1/2 stick) unsalted butter, cut into 4 piecs
3 cups milk
2/3 tsp. salt
black pepper to taste

1/2 cup (2 oz) canned tuna
1 (7 oz) canned corn
1 cup cheddar cheese, shredded
1 Tbsp parsley, chopped
