Tofu Cutlet and 15 Grain Rice Mix Stir Fry

Directions

For the rice:

The key to good fried rice is to make sure you can hear it cook and the only way that happens is if you have a very hot pan. If you cannot get a large enough pan or one that can stay very hot, then do the rice in batches.

Sauté garlic, ginger, and shallots in vegetable or olive oil until aroma. Add the rice and turn up the heat to high to sear the rice. Once you have a hot pan and are searing the rice, add the sweet soy sauce in three batches to make sure you don’t over season the rice as well as causing the pan to cool down too much. Remember, work hot and work fast. Add green onions, and white pepper. Taste and adjust seasoning.

For the Tofu Stir Fry:

Again with wok style cookery, the key is to have a pan that stays consistently hot. If you cannot achieve this then work in batches. Start with sautéing garlic and ginger until aroma. Add all the ingredients except bean sprouts, sweet soy sauce. Once the vegetables are slightly softened add the beans sprouts and season with sweet soy and sesame oil. Taste and adjust seasoning with more soy, sesame oil and white pepper. Garnish with sesame seeds.

10 lbs Jasmine Rice, cooked and cooled
1 lb House Foods 15 Grain Rice Mix, cooked and cooled
2 C Shallots, minced
2 C Garlic, minced
2 C Ginger minced
6 Bu Green Onions, minced
2 qt *Sweet Soy Sauce
To taste, white pepper, ground

* For the Sweet Soy Sauce

3 C Sweet Soy Sauce
4 C Oyster Sauce (Optional)
1 qt Light Soy Sauce
1 qt Maggi Sauce

For the Tofu Stir Fry:

25 ea House Foods Tofu Cutlets, julienne
4 lbs Red Bell Peppers, julienne
4 lbs Yellow Bell Peppers, julienne
3 lbs Carrots, peeled and julienne
2 lbs Shiitake Mushrooms, sliced
2 bu Celery, oblique sliced
2 lbs Red Onion, julienne
2 lbs Yellow Onions, julienne
5 lbs Bean Sprouts
2 C White and Black Sesame Seeds
3 Tbsp White Pepper, ground
To taste, *Sweet Soy Sauce
To taste,Sesame Oil
