Directions

1.Wrap Tofu with paper towels and press to remove all excess water from Tofu. Cut into 1/2 inch cubes. Set aside.

2.Add rice, water, chicken bouillon, curry powder or turmeric and bay leaf to a large microwave-safe bowl. Wrap bowl with the plastic wrap, making venting areas on both sides (approx. 1 inch). Heat in the microwave on high for 5 minutes. Once the rice mixture is boiling, reduce the heat to 200 watts or 150 watts (using the power setting on your microwave panel), and heat for 12 more minutes. Remove the bowl and set aside for 10 minutes in order for the rice to settle. (The bowl may be extremely hot, SO HANDLE WITH CARE>)

3.Heat olive oil in a large frying pan. Add garlic and onion. Once onion becomes transparent, add bacon, chicken and Tofu. Cook until chicken gets cooked through.

4.Add red bell pepper, green peas, and garbanzo beans to Tofu mixture. Add ketchup, cooked rice, salt and pepper and mix. Transfer to serving dish. Serve warm

1 tsp dried minced garlic
1/4 onion, chopped
3 slices bacon, sliced into 1 1/2 inch strips
4 oz chicken breast, cut into 1 inch cubes
3/4 red bell pepper, cut into 1/2 inch cubes
1/2 cup frozen green peas
1 cup canned garbanzo beans
2 Tbsp oilive oil
3 Tbsp ketchup
1/2 tsp salt
black pepper to taste
