Tofu Lemon Pancakes

Heat a nonstick griddle over medium heat.
Blend 1 ½ cups of tofu in food processor until smooth
Mix together the flour, sugar, salt, lemon zest, tofu, and yolks in a large bowl until thoroughly combined.
Beat the egg whites in a separate bowl until stiff. Fold the egg whites into the tofu mixture.
Brush oil on the hot pancake griddle. Ladle half cup size pancakes onto the hot griddle and cook for about 2- 3 minutes per side, until golden.
Serve with warm maple syrup and berries.

1/2 cup all purpose flour
2 tablespoons sugar
1/8 teaspoon kosher salt
Zest of 1 lemon
Canola oil, for cooking
