Tofu Marinade in Olive Oil

Directions

1. Wrap Tofu in paper towels or cloth and press for 2~3 hrs to remove excess moisture. For faster process, carefully place a weight on top of Tofu.
2. Lightly rub top of Tofu with rosemary, thyme and a pinch of salt. Set aside for 30 mins.
3. Blend lightly: Feta cheese, olives and lime slices in a blender. Add basil, cilantro, salt and continue blending as you add the olive oil. Do not over-blend.
4. Discard herbs from TOfu and pat dry. Cut Tofu into 1/2 inch pieces and put into the marinade. Top with sundried tomato.
5. Place Tofu marinade in a tight container and refrigerate overnight. Serve chilled.
