Tofu Meat Loaf

Preheat oven to 350 ° F.
In a small pan, sautee onion and garlic until brown. Set aside to cool.
In large bowl, crumble tofu or mash with potato masher. Combine ground beef, onions and garlic with mashed tofu. Add bread crumbs, pepper and garlic powder and mix well.
In a small bowl, combine tomato sauce and brown sugar. Mix thoroughly.
Bake loaf at 350 degrees for 15 minutes. Pour tomato sauce over loaf and bake an additional 30 minutes or until cooked through. Cool for 10 minutes before slicing. Serve hot
After baking, use extra juice to pour over sliced loaf.

1 package (14 oz.) House Premium or Organic Tofu, Firm, drained
1 lb. extra lean ground beef
1/3 onion, finely chopped
1 clove garlic, finely chopped
¼ cup bread crumbs (plain)
1 (15 oz.) can of low sodium tomato sauce
1 Tbsp. brown sugar
dash garlic powder
