Tofu Miso Dengaku

Directions

1. Wrap Tofu in paper towels or cloth and press for 30 mins to remove excess moisture. For a faster process, carefully place a weight on top of Tofu.
2. Combine all ingredients except Tofu in a pan and cook over low heat stirring constantly. Set aside.
3. Slice Tofu into 1/2 inch thick rectangles or triangles.
4.Grill Tofu on high heat in an oven or a pan. Skewer each Tofu piece with a bamboo stick, if desired.
5. Spread miso paste on Tofu pieces and serve hot. If desired, grill slightly.

For flavored versions of Tama Miso, add: 1)Mustard and vinegar 2)Yuzu zest or 3)Sesame paste to the basic Tama Miso paste.

Basic Tama Miso Paste:
9 oz sweet while miso (preferably Saikyo Miso)
5 egg yolks
3 1/2 Tbsp mirin (Japanese cooking wine)
3 1/2 Tbsp sake
1/3 cup sugar

*Bamboo sticks (optional)
