Directions

Frying oil should be set to 350°F


1. In a food processor combine tofu with all ingredients except vegetables.


2. Once ingredients have been combined well, fold in vegetables.


3. Form mixture into round or oval shaped flattened nuggets.


4. Coat nuggets in a bit of cornstarch and carefully drop them into frying oil. Fry nuggets into a few batches at a time.


5. Once nuggets have browned, remove them from oil and let cool.


6. Serve warm with your favorite sauce on the side.

  • ¼ cup. all purpose flour

  • ¼ cup potato flour

  • 2 tsp. cornstarch

  • 1 ½ Tbsp. nutritional yeast

  • ½ tsp. salt

  • 1 Tbsp water

  • 1 Tbsp vegetable oil

  • ? cup carrots, shredded

  • ? cup white onion, chopped

  • ¼ cup scallions, chopped

  • ? cup red bell pepper, chopped

  • ¼ tsp. pepper

  • Frying oil
