Tofu Spaghetti Sauce

In a bowl, mash Tofu with a potato masher or with a fork. Set aside.
In a medium pot, heat oil and cook garlic and onion until tender.
Add mashed Tofu and Marinara sauce to pot and cook over low heat for 20 minutes. Add salt and pepper to taste.
Cook spaghetti according to the package directions. Serve Tofu Marinara sauce over cooked pasta and top with Parmesan cheese and parsley.

1 package (12 oz.) House Premium Tofu, Extra Firm, drained
1 jar (26 oz.) of your favorite Marinara sauce
1 medium onion, chopped
1 clove garlic, chopped
2 Tbsp. olive oil or vegetable oil
Salt and pepper to taste
Dried parsley to taste
Parmesan cheese to taste
3/4 lb. dried spaghetti
