Tofu Stuffed Bell Pepper

Heat vegetable oil on stove and sauté onions until lightly browned.
Cut tofu into ½” cubes and add to pan. Heat tofu until browned and add salt and pepper to taste. Combine with rice.
Stuff bell peppers with rice and tofu mixture (about 3 tablespoons each or until pepper is filled).
Pour tomato sauce over peppers and bake at 375 degrees for 40 minutes (or until pepper is cooked to your preference). Sprinkle cheese and bake an additional 5 minutes or until cheese is melted.

1 pkg House Foods Premium or Organic Tofu Extra Firm, drained and pressed
1 cup brown rice, cooked
1 (15 oz.) can low sodium tomato sauce
4 bell peppers, seeded
1/3 cup onions
Cheese for sprinkling
Salt and pepper to taste
