1.Heat butter in a medium saucepan over medium heat, sauté garlic and leeks until softened. Add potatoes and cook for 3 minutes.
2.Add vegetable broth and bring to a boil. Reduce heat, cover and simmer 30 minutes or until vegetables are tender.
3.Add Tofu and cook for another 3 minutes.
4.Purée mixture, and chill in a refrigerator until ready to serve.
5.Cool mixture and chill in a refrigerator until ready to serve.
6.Stir well before serving.Sprinkle with chives.
