SUGGESTION:
To make smaller pancakes,

INGREDIENTS:
 
  1/2 Package (7 oz.) House Premium soft tofu, drained
  4 large eggs, beaten
  1/3 cup all-purpose flour
  2 tablespoon melted butter
1/4 cup canola oil
  1/4 teaspoon salt
  1/4 teaspoon orange extract
  Sliced bananas, blueberries and sweetened, dried
cranberries (optional)
 
   
MAKES FOUR LARGE PANCAKES OR
12 SMALL PANCAKES
   
  Prep time: 10 Minutes Cooking time: 6 minutes
   
DIRECTIONS:
 
Place tofu between several layers of paper towels. Press hard to squeeze out moisture. Set in a strainer over a bowl to drain further.

Press down tofu one final time to blot moisture. Place in medium bowl; mash tofu with fork. Add eggs and blend together. Batter will be lumpy and thin.

Add flour, butter, oil, salt and extract. Mix until just blended.

Pour 2/3 cup of batter into large nonstick skillet while cooking over a medium-high heat to make large pancakes. Cook about 3 minutes or until golden brown. Flip pancake over and cook another 3 minutes or until golden brown.

Make a "happy face" by placing 2 pieces of sliced banana above center of pancake and top each piece with a blueberry, raisin or bit of green grape for "eyes." Form smile by placing a half circle of dried cranberries on bottom half of pancake. Serve immediately. Pancakes may also be served with a dusting of powdered sugar, syrup or other favorite topping.
