package (7 oz.) House Premium regular tofu, drained |

tablespoons dark brown sugar |
| |

cup creamy peanut butter |
| |
1/2
teaspoon salt |

tablespoon light, unsulphured molasses |

Sliced
apples and/or celery sticks, crackers (optional) |

DIRECTIONS:

Place
tofu between several layers of paper towels. Press hard to squeeze
out moisture. Set in a strainer over a bowl to drain further.
Crumble tofu into a small mixing bowl; add brown sugar, peanut butter
and salt. Using on electric mixer, mix on low speed until smooth and
well blended.
NOTE: This can also be blended
in a small food processor.
Place peanut butter mixture into an airtight container. Stir in molasses
for a rich brown color. Use immediately; or cover and refrigerate
for up to 48 hours. Stir before using.
Serve with sliced apple or celery sticks; spread on crackers. Also,
makes great peanut butter and jelly sandwiches or peanut butter and
banana sandwiches. |
