Using a wire whisk, combine the Tofu, eggs, salt and vegetable oil.
Stir in the cornmeal. Set aside.
Cook the ground turkey and chili seasoning in a lightly oiled skillet
until the meat is no longer pink.
Add tomatoes and liquid, corn, and black olives. Stir until well
mixed.
Lightly oil a 2-quart baking dish. Spread half the cornmeal mix
over bottom of dish. Pour in the turkey mixture. Layer remaining
cornmeal mixture on top.
Bake for 45 minutes. At the end, sprinkle the grated cheese over
top and bake 5 more minutes.
Allow to stand 10 minutes before cutting and serving.
