Prepare noodles according to package directions below. Cut in 3 to 4-inch lengths. In non-stick skillet, toss noodles over medium-high heat until dry. Add peppers, cook 2 minutes. Add bean sprouts and dressing. Keep warm. Brush both sides of mushrooms with olive oil. Broil skin-side up 3 minutes. Turn, brush insides with more oil. Broil 3 minutes. Arrange mushrooms on individual plates. Place noodle mixture on top. Glaze with extra dressing if desired. Serve warm as an appetizer, a first course, or an accompaniment to grilled meats or fish.
