onion, sliced into 1/3-inch pieces |

red bell pepper, sliced into 1/3-inch pieces |

yellow bell pepper, sliced into 1/3-inch pieces |

green bell pepper, sliced into 1/3-inch pieces |

In a grill pan, add oil and stir-fry onion, red and yellow pepper until softened. Salt and pepper to taste. Seed the tomato and cut into cubes. Mix tomato with salsa sauce.
Slice Tofu in half horizontally and vertically into 10 slices. Add to a pan and cook until golden brown. Salt and pepper to taste.
Place Tofu and vegetables in a rolled up tortilla with the salsa, tomatoes, guacamole, cheese and sour cream. Serve warm.
