You won't believe it's not real cheese! Completely vegan, this broccoli mac and 'cheese' is nutritious and will have your kids fooled!

Cook noodles until al dente. Drain pasta, reserving a 1/4 cup of the pasta water.
Prepare broccoli: Bring water to a boil and fit with a steamer basket. Add the broccoli and cover, cooking until bright green and not overly tender.
In a pan set on medium high heat, sauté onion and garlic until tender.
In a food processer, create tofu “cheese” sauce by combining onion mix, tofu, nutritional yeast, mustard, oil, salt and pepper and pulse until smooth. Add water until desired consistency is reached.
Warm the “cheese” sauce on the stove top on low heat, stirring frequently (about 10 minutes).
Add noodle and broccoli with cheese sauce and cook for additional 5 minutes. Serve warm.
