Creamy Vegan Cilantro Lime Noodles

Cooking Directions

  • Prepare Tofu Shirataki according to package instructions.
  • Add all remaining ingredients to the bowl of a food processor or blender and blend until smooth and creamy. Toss noodles and sauce in a large pot and heat through.

**If not using a high-speed food processor or blender, soak or boil cashews first so they will be soft enough for your blender. To soak: cover cashews with water and soak for 6 hours or overnight. Drain before using. To boil: add cashews to a small pot, cover with water and boil for 10-15 min or until softened. Drain before using.

  • 2 pkg. Tofu Shirataki Spaghetti
  • 1 cup raw cashews (soaked or boiled if not using a high-speed blender or food processor)
  • ½ cup packed cilantro
  • ¾ cup water
  • 2 cloves garlic
  • Zest from 1 lime (about 1 tsp.)
  • Juice from 1 lime (about 2 Tbsp.)
  • ½ tsp. salt
  • ¼ tsp. pepper
