Crispy Tofu Po Boy

Vegetarian po’boy made with crispy tofu instead of fried shrimp, with all the Cajun spices. Pair it with tomato, lettuce, pickles, and spicy mustard for the perfect Southern-inspired sandwich

Cooking Directions

  • Remove extra firm tofu from packaging and press dry with paper towels. Cut into 1-inch cubes.
  • Set a skillet with olive oil over medium-high heat.
  • In small bowl, combine all spices with cornmeal. Toss tofu in cornmeal mixture and carefully place in skillet. Sear tofu on each side for 1 - 2 minutes, or until at least 2 - 3 sides are golden and crisped. Drain on paper towels. Spread mayo and spicy mustard on insides of sandwich rolls. Add sliced tomatoes, lettuce, pickles, and crispy tofu.

Ingredients

For the Crispy Tofu:

  • 1 pkg. House Foods Tofu Extra Firm, drained and pressed
  • ½ cup cornmeal
  • ½ tsp. Cajun seasoning
  • ½ tsp. Old Bay seasoning
  • ½ tsp. salt
  • 2 Tbsp. vegetable oil

To Assemble Sandwich:

  • Sandwich rolls
  • Tomato, sliced
  • Lettuce
  • Pickles
  • Mayo
  • Spicy mustard
