French Toast Tofu with Maple Banana & Pecan

Ripe bananas, crunchy pecan halves with coconut and cinnamon flavors bring a richness of taste to French toast, you won’t believe it's tofu!

Cooking Directions

  • Remove tofu from container. Drain and press tofu.
  • Slice tofu into 1/4 inch thick squares and place onto a cooking pan. Apply coconut oil onto the griddle at medium-high heat. Mix together cinnamon and sugar in a bowl.
  • Place tofu squares onto the hot griddle. Sprinkle half of cinnamon sugar mixture while its cooking on each side. Cook tofu for 4 minutes on each side until golden brown. Remove the tofu from the griddle onto plate and let it rest for 5 minutes.

Maple Banana Pecan:

  • Cut three Medium bananas lengthwise into halves. Cut each banana half by three. Prepare the maple syrup and pecans together in a bowl. Lightly spray a nonstick skillet over medium high heat and place the bananas into the skillet sauté for half minute on each side. Then pour maple syrup and pecans into the skillet until hot.

To Assemble:

  • Place banana onto tofu square and top with extra maple pecan syrup sauce. Add another layer of tofu and banana. Top with additional maple pecan syrup and serve.

Ingredients

  • 1 pkg. House Foods Extra Firm Tofu, drained and pressed
  • 2 Tbsp. of coconut oil
  • 3 Tbsp. of granulated sugar
  • ½ Tbsp. of cinnamon

Maple Bananas & Pecans:

  • 3 medium ripe banana
  • 1/3 cup of maple syrup
  • 1/4 cup of pecan halves
