Italian Pasta Salad

Juicy cherry or plum tomatoes, crisp cucumber, black and Kalamata olives and salami are tossed with a light olive oil and vinegar dressing for a refreshing dish that’s perfect for summer.

Cooking Directions

  • Prepare Tofu Shirataki according to package instructions. Cut into manageable size.
  • Combine all ingredients into large mixing bowl and toss with dressing. Chill for 1 hour before serving.

Ingredients

  • 2 pkg. House Foods Tofu Shirataki Angel Hair or Macaroni
  • 2 Tbsp. black olives, sliced
  • 2 Tbsp. kalamata olives, sliced
  • 1 cup cherry or plum tomatoes, sliced in half
  • ⅓ cup salami, chopped
  • ⅓ cup cucumber, chopped

For dressing:

  • 3 Tbsp. olive oil
  • 2 Tbsp. red wine vinegar
  • salt & pepper to taste
