Mini Tofu Spinach Quiche

Mini tofu spinach quiche that is crust-less and baked in a muffin tin. Great for breakfast or a quick snack.

Cooking Directions

  • Prepare In a blender, combine tofu, soy milk, mustard, salt, nutmeg, ground red pepper, black pepper, parsley and Parmesan soy half of vegan cheddar cheese; process until smooth.
  • In a large bowl combine tofu mixture with chopped baby spinach. Pour into mini Muffin pan top with vegan cheddar cheese. Put in preheated oven until quiche is golden on top, 20 to 30 minutes.
  • Allow to stand for at least 5 minutes before taking them out

  • 1 pkg. House Foods Tofu Extra Firm
  • 1 lb. chopped organic baby spinach
  • 1 Tbsp. olive oil
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • ½ cup soy milk
  • ¼ tsp. Dijon mustard
  • ¾ tsp. salt
  • ½ tsp. ground red pepper
  • black pepper to taste
  • 1 Tbsp. dried parsley
  • 1/8 cup Parmesan flavor soy cheese
  • 1 cup vegan cheddar cheese (half for topping)
