Protein Style Tofu Sandwich

Bring out the kid in you and create this fun lunch for your kids. Making this fun-to-eat lunch is a great way for kids to get the nutrients they need from the combination of tofu and veggies

Cooking Directions

  • Remove tofu from package. Drain and press dry. 
Slice tofu into approximately 1 inch thick slices. Sprinkle salt and let it sit for about 15 minutes. Add about ½ tablespoon of butter to a pan over medium heat. Add tofu and cook to brown slightly on each side. Make a small slit in the tofu so that it forms a pouch. Set aside.
  • Add carrot rounds to a microwave safe bowl and cook on high for about one minute until soft. Cool. Poke carrots with a large straw to create two small rounds for the bear ears. Using another round for the bear’s head, cut two small slits where you’d like to place the ears and insert the small rounds. Using another round, cut a slice with a small “I” shaped cookie cutter to create hands. Slice radish in half and poke with the straw to extract white part. Place a small circle of nori on the white part of the radish to be used as the bear’s nose. Add 2 smaller circles of nori to the carrot shaped bear, forming the eyes. Add the nose to complete its face.
  • Create wheels by poking the broccoli stems or cucumber with the straw. Set aside.

To assemble:

  • Add the filling to the tofu pouch and transfer to the bento box. Attach the wheels to the tofu car using a toothpick. Place the bear shaped carrot inside the tofu pouch. Garnish with lettuce or choice of vegetables. Repeat for second tofu car.

Ingredients

For the Car:

  • ½ pkg.House Foods Tofu Firm, drained and pressed dry
  • ⅛ tsp. salt
  • Butter
  • Broccoli stem or cucumber

For the Filing:

  • 1 tsp. hummus or mayonnaise
  • Pickles and raw vegetables of your choice (1 sweet pepper, a few basil leaves, etc.)
  • ½ cup lettuce, loosely packed

For the Bear:

  • 1 large carrot, sliced into ¼ in. rounds
  • Nori, cut into small circles
  • 1 small radish

Special Tools:

  • Seaweed cutter
  • Large straw such as bubble tea straw
  • “I” shape cookie cutter
