Smart Noodle Kugel

Try our twist on this lightly sweet traditional treat. It has all the warm holiday flavors of cinnamon, vanilla and raisins but without all the carbs.

Cooking Directions

Preheat oven to 350°F.

  • Prepare shirataki noodle according to package.
  • In a large mixing bowl, whisk together the butter, milk, eggs, sugar, vanilla, sour cream, cottage cheese, cinnamon, and raisins. Fold in the noodles. Place into a small casserole dish lined with nonstick cooking spray, or a little bit of melted butter. Mix together the bread crumbs, butter, and sugar in a small bowl. Sprinkle evenly overtop the noodle kugel. Bake in the oven for about 45-50 minutes, or until browned and set. Allow to cool for ten minutes before serving.

  • 2 pkgs. Smart Noodle or Tofu Shirataki Fettuccine, cut in half
  • 3 Tbsp. unsalted butter, melted
  • ½ cup milk
  • 3 large eggs, lightly beaten
  • 3 Tbsp. sugar
  • 2 tsp. vanilla
  • ½ cup sour cream, or cream cheese
  • ¾ cup cottage cheese, or ricotta
  • 2 tsp. ground cinnamon
  • ⅓ cup raisins
  • ½ cup panko bread crumbs
  • 1 Tbsp. melted butter
  • 2 Tbsp. sugar
