Fresh veggies, shirataki noodles and marinated tofu wrapped spring rolls make for a refreshing, quick and easy appetizer.
Prepare Shirataki noodles according to package instructions, set aside.
Pour water into a shallow dish and set aside. Prepare spring roll by dipping rice paper in the water for a few seconds and transfer to a damp cutting board, making sure it is not wrinkled or overlapping.
Add a small handful of Shirataki noodles and layer the carrots, cucumber, bell pepper, and a few pieces of tofu on top. Gently fold over once, tuck in edges on both sides, and continue rolling until it is sealed.
Transfer to plate, seam side down, underneath a damp paper towel to keep fresh. Repeat with remaining filling and rice paper. Serve with your choice of dipping sauce.
