Tofu Mushroom Burger

Mushrooms combined with tofu and spices give this meatless burger a bold and rich flavor.

Cooking Directions

  • Set a large pan to medium high heat and add a bit of oil. Once oil is hot add mushrooms and sauté until browned then set aside.
  • In a food processor combine cashews with 1 tablespoon of oil until it forms a paste or cashew butter.
  • Crumble tofu in a large bowl and combine it with cashew butter, mushrooms, oats, tamari, sugar, onion powder, garlic, salt and pepper.
  • Form 6 patties from mixture; they should be about ¼ inch thick.
  • In a pan set to medium high heat add a bit of oil; once oil is hot add patties. Let patties brown from 3-4 minutes on each side. Remove from heat once patties are done and let them cool for 1 – 2 minutes.
  • Prepare your burger, add desired toppings and condiments.

Ingredients

  • 1 pkg. House Foods Tofu Extra Firm or Super Firm, pressed
  • 8 oz. button or crimini mushrooms, finely chopped
  • ½ cup rolled oats
  • 2 Tbsp. tamari
  • ½ Tbsp. sugar
  • 1 tsp. onion powder
  • ½ tsp. garlic powder
  • ½ tsp. salt
  • ¼ tsp. pepper
  • ½ cup cashews
  • 1 Tbsp. oil

To assemble:

  • 6 burger buns
  • 1 head lettuce, washed and cut
  • 1 tomatoes, sliced
  • 1 onion, thinly sliced
  • 1 jar sliced pickles
  • ketchup
  • mustard
