Tofu Saltado (Peruvian Stir-Fry)

A vegan spin on a popular Peruvian dish with flavors of stir fried garlic, bell peppers, purple onions, tomatoes, French fries, soy sauce, cilantro and parsley

Cooking Directions

Aji Verde Sauce:

  • Add all ingredients to a food processor and puree until smooth.
  • In a large wok set to high heat add garlic and tofu, season tofu with cumin, salt and pepper.
  • When tofu begins to brown add onion, let both brown evenly.
  • In the meantime reheat frozen French fries according to manufacturer’s instructions.
  • Once onion and tofu have browned add bell peppers, let them sear for a few minutes.
  • After bell peppers have seared add soy sauce, red wine vinegar and French fries.
  • Once fries have absorbed the sauce add parsley and cilantro, remove from heat and plate.
  • Serve immediately with aji verde sauce (recipe to follow)

**Aji Verde sauce - makes approximately 2 cups.


Aji Verde Sauce:

  • 1 bunch cilantro
  • ½ bunch parsley
  • 1 serrano pepper
  • 2 garlic cloves
  • Salt and pepper, to taste
  • ¼ cup Extra Virgin Olive Oil
  • 2 Tbsp. Lemon juice or TT
  • ¼ cup mayonnaise (You can substitute with vegan mayo or olive oil and blend until it becomes creamy.)
  • Water

  • 1 pkg. House Foods Extra Firm Tofu, drained, pressed, and sliced
  • Olive oil
  • 1 Tbsp. chopped garlic
  • 1 tsp. cumin
  • salt and pepper to taste
  • ½ purple onion, cut in ½ in. slices
  • ½ red bell pepper, sliced
  • ½ yellow bell pepper, sliced
  • 2 Roma tomatoes, quartered
  • 3 Tbsp. soy sauce
  • 2 Tbsp. red wine vinegar
  • 16 oz. (1 lb) French fries, frozen
  • ½ Tbsp. chopped parsley
  • 1 Tbsp. chopped cilantro
