Tofu Scramble

Onion, mushroom, and red pepper mixed with extra firm tofu and seasoned with turmeric, ginger, salt and pepper make for the perfect vegetarian breakfast.

Cooking Directions

  • Heat olive oil in pan over high heat and sauté onion until translucent. Add bell pepper, mushrooms and garlic and cook through.
  • Crumble tofu into pan and add spices. Stir well to combine and heat through.
  • Garnish with cilantro and serve.

Ingredients

  • 1 pkg. House Foods Tofu Extra Firm, drained and well pressed
  • 1 medium onion, chopped
  • 1 cup mushrooms, sliced
  • ½ medium red bell pepper, cored, seeded and chopped
  • 2 cloves garlic, minced
  • ½ tsp. turmeric (start with ½ tsp, add more depending on color and taste)
  • ½ tsp. ground ginger

  • 1 Tbsp. olive oil
  • Salt and pepper to taste
  • garnish with cilantro
