Vegan Fra Diavolo
Heat 1 tsp. olive oil in a pan on medium heat, add shallots and sweat until they become translucent.
Add crushed tomatoes and stir in tomato paste, 1 Tbsp. of parsley and the remaining dry spices.
Add vegetable stock and let the mixture simmer on low heat for 20 mins.
Rinse and strain Shirataki noodles and add to the sauce and let cook for 3-5 mins.
To a separate heated pan, add 2 tsp. of olive oil and sear extra firm tofu slices until slightly brown on both sides.
Pour noodles into 2 bowl and top each with 2 crispy tofu slices. Garnish with the remaining chopped parsley.
