Grilled Pineapple and Avocado Shirataki Noodles

Buttery avocado and grilled caramelized pineapple is mixed with red pepper, red onion, cilantro, jalapeño and lime juice for a refreshing summer favorite.

Cooking Directions

  • Heat up the barbecue or grill pan. Place each slice of pineapple and lay on hot grill. Cook the pineapple for about 3 minutes per side, just until grill marks are formed.
  • Grill the avocados by placing them face down on the grill. Grill for about 3 minutes until grill marks are formed.
  • Chop up all veggies, including the pineapple and avocado. Add everything to a large bowl.
  • Prepare Tofu Shirataki according to package instructions. Add noodles to the bowl and serve.

Ingredients

  • 2 pkgs. House Foods Tofu Shirataki Spaghetti
  • 3 slices pineapple sliced into 3/4" thick slices (about half a pineapple)
  • 1½ Avocados, sliced in half with pit removed
  • 1 red pepper, chopped (about 1 cup)
  • ½ red onion, chopped (about ½ cup)
  • ½ cup cilantro, roughly chopped
  • 1 Tbsp. lime juice
  • 1 clove garlic, minced
  • ½ of a jalapeno, minced (or to taste)
  • ¼ tsp. salt
  • ¼ tsp. pepper
