Lobster Roll with Herbed Tofu Dressing

Maine-style lobster rolls with fresh herbed tofu dressing and lemon zest served on a toasted bun for a summer treat.

Cooking Directions

  • Crack open the lobsters and remove the meat. Chop into even, bite-sized chunks.
  • In a food processor, combine the soft tofu, lemon juice, lemon zest, garlic, dill, and parsley. Pulse until smooth and creamy. Add the olive oil, salt, and pepper and pulse again until combined.
  • In a large bowl, combine the lobster meat, tofu dressing, and celery. Add salt and pepper to taste, if needed. Divide among the toasted hot dog buns and serve.

  • 4 1- to 1 ½- pound cooked Maine lobsters
  • ⅓ pkg. House Foods Tofu Soft
  • 1 Tbsp. fresh lemon juice
  • 1 tsp. lemon zest
  • 1 garlic clove
  • 2 Tbsp. fresh dill
  • 2 Tbsp. fresh parsley
  • 2 Tbsp. extra virgin olive oil
  • ¼ tsp. salt
  • ¼ tsp. freshly ground black pepper
  • 1 large stalk celery, finely diced
  • 4 hot dog buns, split and toasted
