Maine-style lobster rolls with fresh herbed tofu dressing and lemon zest served on a toasted bun for a summer treat.

Cooking Directions
Crack open the lobsters and remove the meat. Chop into even, bite-sized chunks.
In a food processor, combine the soft tofu, lemon juice, lemon zest, garlic, dill, and parsley. Pulse until smooth and creamy. Add the olive oil, salt, and pepper and pulse again until combined.
In a large bowl, combine the lobster meat, tofu dressing, and celery. Add salt and pepper to taste, if needed. Divide among the toasted hot dog buns and serve.
