Minestrone with Tofu Shirataki

Cooking Directions

  • Prepare Tofu Shirataki according to package instructions.
  • Add all ingredients to large pot and bring to boil. Reduce heat to low and simmer for 20 minutes.

  • 1 pkg. House Foods Tofu Shirataki Macaroni or Fettuccine
  • 6 cup low sodium chicken broth
  • 1 can low sodium diced tomatoes
  • ½ can cannellini beans, drained
  • 1/2 cup onion, chopped
  • 1 cup celery, chopped
  • 1 cup zucchini, chopped
  • 2 bay leaves
  • 1 tsp. italian seasoning
  • dash salt and pepper
