Tofu Matcha Waffles

Green tea waffles drizzled with white chocolate sauce and topped with seasonal berries.

Cooking Directions

  • Using stand alone electric mizer, whip tofu water (aquafaba) into medium peaks. If using a handhled electric mixer, do not whip aquafaba until all other ingredients are combined (takes approximateily 10 min.; start whipping at medium speed then gradually increase to high).
  • While aquafaba is being whipped; in a blender or food processor, puree tofu. Then combine tofu with water, coconut oil and matcha; set aside.
  • In a large mixing bowl, whisk together the flour, sugar, cornstarch, baking powder, and salt.
  • Add the tofu mixture to the flour mixture, whisk just until all the flour is moistened (lumps are ok, do not over mix). If you're whipping aquafaba using a handheld mixer, you can whip it into medium peaks.
  • Fold in whipped aquaba into mixture, being careful not to over mix.
  • Spray cooking oil onto hot waffle iron and add batter (amount of batter and cooking time varies according to waffle iron manufacturer, adjust accordingly).
  • While waffles are cooking, heat up coconut milk over stove top or microwave. Once hot, combine it with white chocolate and stir until it's smooth enough to drizzle.
  • Once waffles are done, serve hot with white chocolate sauce and fruit of choice.

  • ½ pkgs. House Foods Tofu Soft, drained (reserve water aka aquafaba)
  • ½ cup aquafaba (reserved tofu water)
  • 1 cup water
  • ¼ cup melted coconut oil
  • 1½ cups flour
  • ¼ cup sugar
  • 1 Tbsp. matcha powder
  • 1 Tbsp. cornstarch
  • 1 Tbsp. baking powder
  • ½ tsp. salt
  • 4 oz. white chocolate
  • ½ cup coconut milk
  • fruit of choice
