Tofu Quinoa Salad

Fluffy quinoa mixed with black beans, corn, cucumber, grape tomatoes and purple onion tossed in lemon vinaigrette.

Cooking Directions

  • Cook quinoa according to package instructions. Allow to cool.
  • Combine all ingredients for salad in a large bowl. Mix well and chill for at least 30 minutes. Combine all ingredients for dressing. Pour over quinoa salad, mix and serve.


  • 1 pkg. House Foods Tofu Super Firm Cubed
  • 1 cup quinoa (couscous can be substituted)
  • ½ cup canned corn
  • ½ cup black beans, drained
  • ½ cup cucumber, chopped
  • ¼ cup cilantro, chopped
  • 1 cup grape tomatoes, quartered
  • ⅓ cup purple onion, chopped
  • salt and pepper, to taste


  • Juice from 1 lemon
  • ¼ c olive oil
  • ½ tsp sugar
