Creamy and lightly sweetened vanilla apple spread with a hint of warm spice – try it on your morning bagel or toast.
In a heavy bottom pot over medium heat, combine the apples, cognac, lemon juice, brown sugar, 1 teaspoon cinnamon, and salt. Cook without a lid for about 15 minutes, or until the apples are soft, and the mixture has broken down into a very rough jam. Set aside to cool.
In a blender, pulse the tofu, 1½ teaspoon cinnamon, vanilla, cream cheese and honey until smooth. Add in the cooled apple mixture and whip until smooth. Spread on your choice of bagel and top with the cinnamon sugar.
