Edamame Tofu Dip

Cilantro, chili, garlic and ginger give this dip pizazz while tofu gives it a smooth consistency

Cooking Directions

  • Combine all ingredients in a blender until smooth. Place in a bowl and refrigerate for a few minutes; serve chilled with vegetables or rice crackers.

Ingredients

  • ½ pkg. House Foods Tofu Medium Firm
  • 2 cups shelled edamame
  • ½ bunch cilantro
  • 1 jalapeno or serrano (depending on how spicy you want the dip)
  • 3 garlic cloves
  • 1 – 1 ½” thin piece of ginger
  • ¼ cup olive oil
  • juice of 2 lemons
  • 2 Tbsp. soy sauce
  • 2½ tsp. salt
