Italian Stuffed Tofu Manicotti

Tofu replaces ricotta cheese for a creamy filling in this light Italian pasta dish.

Cooking Directions

  • Preheat oven to 350°F.
  • Cook manicotti according to package instructions.
  • Add remaining ingredients to a large bowl and mix well to combine.
  • Line a casserole or baking dish with half of the spaghetti sauce. Pipe the tofu filling into the manicotti. Once filled, pour remaining sauce on top of manicotti. Top with parmesan cheese (optional) and bake for 30 minutes.

  • 2 pkgs. House Foods Soft Tofu, patted dry and mashed
  • 1 box manicotti
  • 1½ cups chopped spinach
  • 4½ cups low sodium spaghetti sauce
  • 2 Tbsp. extra virgin olive oil

  • 2 Tbsp. garlic, minced
  • 2 Tbsp. parsley
  • 2 Tbsp. lemon juice
  • ¼ cup soy milk (optional)
  • salt and pepper to taste
