Tofu replaces ricotta cheese for a creamy filling in this light Italian pasta dish.
Preheat oven to 350°F.
Cook manicotti according to package instructions.
Add remaining ingredients to a large bowl and mix well to combine.
Line a casserole or baking dish with half of the spaghetti sauce. Pipe the tofu filling into the manicotti. Once filled, pour remaining sauce on top of manicotti. Top with parmesan cheese (optional) and bake for 30 minutes.
