Tofu replaces fish in this twist on a classic Mexican recipe. Tomato, cilantro and avocado round out this refreshing dish with serrano peppers for a hint of spice.

Ingredients

  • ½ pkg. House Foods Tofu Medium Firm or Firm, drained, pressed and cut into small cubes
  • 1 finely diced serrano chili
  • ⅓ cup chopped tomato
  • 2 tsp. chopped cilantro
  • 1 avocado, peeled, seeded, chopped
  • juice of 1 lime
  • salt and pepper, to taste
